Growing up, I lived in a household with a very quirky eater – my father. I wouldn’t call it picky, per se. Just quirky. For example, while he loved a lot of pasta dishes, if it included elbow noodles, he wouldn’t touch it. Substitute any other kind of noodle, and we’re good to go.
We were limited by what he would eat, and so ended up eating the same thing on a fairly regular basis.
When I moved out of my parent’s house, I embraced the opportunity to choose what I was going to eat every week, and the opportunity to experiment with different foods that I hadn’t previously tried before. This is when I found my love for meal planning, something that I spend some time doing every weekend.
This coming week is a much shorter week for me than usual – I’m heading to BlissDom on Thursday, so am only really planning the first few days of the week. John is on his own for meals for the rest of the week, which is okay with him as it means he can eat as much gluten as possible (something a little difficult when I’m around due to my gluten intolerance).
- Monday: Individual Mexican Meatloafs (from Quinoa Revolution, one of my current favourite cookbooks). We were going to have this last week, but I got ambitious at the grocery store and decided on a full ham dinner last night.
- Tuesday: Diced Chicken with Sweet and Spicy Eggplant (from the most recent LCBO Food & Drink magazine – recipe not currently on their website).
- Wednesday: Pork souvlaki, using this marinade. John will probably have his on a pita, whereas I’ll have mine on top of a greek salad.
- Lunches: I’m deviating from my typically planned chickpea salads for this week. With some of last night’s leftover ham, so I’ve made some delicious ham salad for sandwiches.
